The bright pink and white rings running through Chioggia beets—sometimes called candy-cane beets—are irresistibly beautiful. Their striking appearance, though, is trumped by their sweet, mild flavor. When you find the beets with their greens attached, it's like getting two vegetables for the price of one. The photograph, a Gourmet outtake, is by Romulo Yanes.
