The European flat oyster (Ostrea edulis), as its name implies, is native to Europe but is now cultivated on both North American coasts as well. This variety has a rounder shell than other types and is popular among half-shell enthusiasts. Here are two European flat oysters, one shell-side up and one open, resting on a mound of salt.
